Yogurt Chia Pudding & Kiwi Popping Boba

Ingredients (2 serving):
- 200 ml plain yogurt (dairy or non-dairy)
- 150 ml almond milk (or milk of your choice)
- 40 g chia seeds
- 2 tbsp agave syrup or honey
- 3 small ripe kiwis, peeled
- 60 g Kiwi Popping Boba
- 2 kiwi slices for garnish (optional)
- mint leaves for garnish (optional)
Directions:

In a mixing bowl, combine almond milk, yogurt, chia seeds, and sweetener. Stir well to ensure the chia seeds are evenly distributed and not clumping. Cover and refrigerate for at least 2 hours (or overnight) until the mixture thickens to a pudding-like consistency.

Use a fork or a blender to mash or puree kiwis until smooth. Set aside.

In serving glasses or bowls, start with a layer of the chia pudding. Add a layer of kiwi puree on top. Repeat the layers as desired, finishing with a chia pudding layer.

Sprinkle Popping Boba on top for a burst of flavor. Garnish with fresh kiwi slices and mint leaves, if desired.
